「幻」と言われる国産サフォーク。

この冬、期間限定で
サフォーク羊のおやきを販売します。

信州新町で、島田さんの手で育てられている
数の限られた国産サフォーク。
羊に余計なストレスをかけないための飼育環境づくり、
こまめな清掃と日々の観察を通して、
わずかな体調の変化も見逃さず向き合うこと。
さらに、島田さん自身が精肉にも関わり、
最後まで肉の状態を確かめています。

この羊は、
飯田の日本料理柚木元さんにて、
年に数回、限られた席数の会で使われてきました。
頭数が多くないため、
日常的に流通する素材ではありません。

素材の持ち味を丁寧に引き出した仕立てで、
食べ終わったあとに、
記憶に残る味わいです。

Less than 1% of lamb consumed in Japan is domestically produced.
This is one of them — a rare domestic Suffolk lamb.

This winter, for a limited time only,
we are offering Suffolk Lamb Oyaki.

The lamb is raised in Shinshū-Shinmachi by Mr. Shimada,
in very limited numbers.
Great care is taken to create a low-stress environment,
with frequent cleaning and daily observation,
so even subtle changes in the animals’ condition are noticed.
Mr. Shimada is also personally involved in the butchery,
carefully checking the quality of the meat until the very end.

This Suffolk lamb has previously been served only on rare occasions
at Japanese Cuisine Yukimoto in Iida,
where it appears in limited-seat seasonal gatherings.
Due to its small production,
it is not something commonly found on the market.

Prepared with respect for the natural character of the ingredient,
this oyaki leaves a lasting impression after the final bite.

大町〈儘に〉さんにお願いして、
山肴やまきだけのサルシッチャおやきをつくってもらいました。

使っているのは、安曇野の空の下で育った安曇野放牧豚。
旨みが濃く、やわらかな肉質。
ソーセージのようで、粗挽きのハンバーグのような、
噛むたびに広がる滋味を、香ばしく包みました。

Starting December 14, Matsumoto City will host the “Matsumoto City Illumination 2024-2025.“At the National Treasure Matsumoto Castle, projection mapping will display three-dimensional images inspired by historical narratives, traditional culture, and flowers on the castle tower and stone walls.In the city center, approximately 80,000 lights will illuminate from Daimyocho Street to Chitose Bridge, creating a magical atmosphere.
